I mix up some corn, diced garlic, fire roasted diced tomatoes, salt, pepper, and dill. I spoon that over each fillet on some foil. I then fold it up and toss them in the crock pot for a couple of hours and they come out sooooo juicy and flavorful!

Mom of 3 Teenager's
Marinade in Italian, ceasar, or greek dressing, then grill or bake. Different tastes depending on the dressing and cooking style.
I posted this on another thread...so I copied and pasted (then added a few more ideas!):
I eat tilapia at least twice a week...usually more. I make it so many different ways! My husband calls it my "hamburger" since I can do so many things with it.
I've never really fried it, but I don't fry much anyway. Some of the ways I cook it...off the top of my head are:
BAKED:
*Breaded in flour/egg whites/corn flake crumbs.
*Dipped in mayo and breaded in Shake 'n Bake.
*Sprinkled with a little olive oil, and seasoned with whatever seasoning sounds good at the moment.
*Marinated (only for 30 minutes!!!!) with any of the McCormick grill mates.
*I also have a few "go to" recipes that my family loves. One has a chili-type sauce that's pretty hot. Another has a sauce made with mayo and parm cheese that's awesome!!
*Another favorite is to carmelize a bunch of onions, put the tilapia in a baking dish, cover the fish with a can of stewed tomatoes and the onions and bake for about 20 minutes. MMMMM!!!!! Serve it with rice or noodles.
*I also make a recipe that came from a local hotel, where you use 2 pieces of tilapia, with crumbled blue cheese and coconut (it's posted here somewhere too).
OTHER IDEAS:
Pan-fried...coat lightly with Fryin' Magic, or any other breading. Pan fry for 3-4 minutes on each side with a little olive oil or vegetable oil.
You can grill it too! Season it the way you like, and make sure to use a grill basket that's been sprayed REALLY well! There's almost no fat in tilapia, so it sticks if you don't.
When we have spaghetti and meatballs, I bake a few pieces of tilapia seasoned with garlic and Italian seasoning. I put it on top of my pasta before I put the sauce on (instead of meatballs). This is good with alfredo sauce too.
When we have tacos, I bake a few pieces with Mexican seasonings and use it to fill my soft taco shells.
We don't have Meijer so no bargains for me but I just saw this recipe last night in December's All You and thought it looked good AND simple. XU of course I thought of you when I saw it and figured you did some variation of this already.
Ingredients
Preparation
- 4 tilapia fillets (about 6 oz. each)
- Salt
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 1/2 cup white wine
- 1/4 cup lemon juice
- 1 tablespoon capers
- 2 tablespoons finely chopped fresh parsley
The link.
- 1. Sprinkle fish lightly with salt and dredge in flour on both sides to coat. Warm 1 Tbsp. each oil and butter in a large skillet over medium-high heat until butter melts. Sauté 2 fillets, turning once, until browned on both sides and cooked through, 3 to 4 minutes total. Transfer to a plate; cover with foil to keep warm. Repeat with another Tbsp. oil and butter and remaining fish.
