Default Frito Pie recipes

Frito Pie
  • 1 pound Velveeta cheese, cut in cubes
  • 1 can (10 oz.) Rotel diced tomatoes with green chiles
  • 1 package (10 oz.) regular size Fritos
  • 2 cans (1 pound, 8 oz. each) chili without beans or about 5 cups homemade chili
  • 8 ounces cheddar cheese, shredded
Preheat the oven to 350F degrees. Spray a medium-size baking dish with non-stick spray. Combine the cheese and tomatoes in a saucepan (or see note below to use the microwave) and heat slowly until the cheese melts. Heat the chili in another saucepan.


Place half the Fritos in the baking dish. Spoon half the chili over the Fritos. Cover with a layer of cheese sauce. (There will be cheese sauce left over to use as a dip.) Scatter the remaining Fritos over the cheese. Cover with the rest of the chili and sprinkle with the shredded cheddar cheese. Bake uncovered about 30 minutes, until hot and bubbly.
Yields four servings.
Note: To microwave the cheese sauce, place the cubed cheese in a glass bowl. Pour the Rotel over the cheese. Cover with plastic wrap, leaving a small opening on one side as a vent. Microwave 3 minutes, stirring the mixture after each minute. Do not over-cook or allow the cheese to boil.

Alternate Recipe:

Ingredients-
3 cups FRITO® brand corn chips, divided
1 large onion, chopped
1 cup grated American cheese
1 (15-ounce) can chili (any variety)

Directions
Preheat oven to 350ºF. Place 2 cups of corn chips in a baking dish. Arrange chopped onion and half of grated cheese on the corn chips. Pour chili over onion and cheese. Top with the remaining corn chips and grated cheese. Bake for 15 to 20 minutes.

Just so we're clear on this. I HATE YOU.

I love frito pie. I sat here for a good 20 minutes thinking "yeah, I have all the makings, but I shouldn't...".

I gave in. I am now shoveling frito pie into my face. It is going straight to my hips. I blame you.

Here's my quick recipe:

can of Stagg chili - heat it up.

pour mound of fritos into a bowl

top with chili

top with grated cheese

microwave for 40 seconds to melt cheese

top with chopped avocado

top with chopped tomato

I didn't have any onions in the house

EAT.

Yeah, but it's hard to hate someone when you are eating pure comfort food! Something about fritos, chili, and cheese, maybe a touch of "fat free" sour cream ;), aaahhhh.......

besides, the kids will ALWAYS eat it! Cost to the hips...thousand calories...cost of a kid friendly recipe...PRICELESS!

When I think of Frito pie, I think of high school football games and eating them in the stands. The concession stand served them right in the single serving size bag of Fritos- open it up, scoop in the chili, top with nacho cheese, and shove in a spoon. Talk about memories...
