Default 1982 Bisquick Impossible Pie Recipes

I will type these as I can, and bump when I add a new one! They are cool-- they make their own crust! And most of you can make them cheaply or free from stockpile ingredients!!! Other similar recipes are on the Bisquick web site!

IMPOSSIBLE CHEESEBURGER PIE

1lb ground beef
1 1/2 c chopped onion
1 1/2 c milk
3/4 c Bisquick baking mix
3 eggs
1/2 t salt
Pepper to taste
2 sliced tomatoes
1 c shredded Cheddar or processed American (Velveeta) cheese

Heat over to 400. Grease pie plate, 10 x 1 1/2 inches. Brown beef with onion, drain. Spread beef mixture in pan. Beat milk, baking mix, eggs, S/P until smooth. (15 sec. in blender ot 1 minute by hand) Pour over beef. Bake 25 minutes. Top with tomatoes, sprinkle with cheese. Bake until knife inserted in center comes out clean, 5-8 more minutes. Cool 5 minutes. (Serves 6-8; high altitude increase first bake time to 30 minutes)

IMPOSSIBLE QUESADILLA PIE

2 cans (4oz each) chopped green chiles, drained
4 c shredded cheddar cheese
2 cups milk
1 c Bisquick baking mix
4 eggs

Heat oven to 425. Grease pie pan. Sprinkle chiles and cheese in pan. Beat remaining ingredients until smooth (15 sec in blender or 1 minute by hand). Pour over chiles and cheese. Bake until knife inserted between center and edge comes out clean-- 25-30 minutes. Cool 10 min. Serve with sour cream & guacamole if desired. (Serves 6-8; High altitude= 40 minutes)

IMPOSSIBLE BACON PIE

12 slices bacon, fried crisp & crumbled
1 c shredded natural Swiss cheese
1/3 c chopped onion
2 c milk
1 c Bisquick baking mix
1/4 t salt
Pepper to taste

Heat oven to 400. Grease pie pan. Sprinkle bacon, onion and cheese in pan. Beat remaining ingredients until smooth (15 sec in blender or 1 minute by hand). Pour over bacon, onion and cheese. Bake until knife inserted between center and edge comes out clean-- 35-40 minutes. Cool 5 min. (Serves 6; High altitude= no adjustments)

IMPOSSIBLE LASAGNE PIE

1 lb ground beef
1 t dried oregano
1/2 t dried basil
1 can (6oz) tomato paste
1 c shredded mozzarella cheese
1/2 c small curd cottage cheese or ricotta
1/4 c grated Parmesan cheese
1 c milk
2/3 c Bisquick baking mix
2 eggs
1 t salt
1/4 t pepper

Heat oven to 40. Grease 8x8 pan. Brown beef, drain. Stir in oregano, basil, tomato paste and 1/2 c of mozarella. Layer ricotta & Parmesan in pan. Spread beef over top. Beat milk, baking mix, eggs, S/P until smooth. (15 sec. in blender ot 1 minute by hand) Pour over beef. Bake until knife inserted in center comes out clean, 30-35 minutes. Sprinkle with remaining cheese. Cool 5 minutes. (Serves 6-8; high altitude= no adjustments)

I had to laugh when I saw this because I've seen how bisquick and pillsbury love to repeat their recipies - I had no idea the "pies" went back to 1982. In a crazy pregnant craving one day I bought the bisquick checkout line book. 2002? Anyway, I bought it for the Apple, ham, cheese egg bake. (I think its called Impossibly easy Ham and apple cheese pie) or something like that. Anyway, I never would have tried it if I wasnt having that weird craving, but I still love it to this day!

I think this may be a slightly different version than is posted above ...

Impossibly Easy Cheeseburger Pie - The 'official' recipe is at this link, but I'll post my slightly modified version. (I've tried to 'healthi-fy' it a little and sneak in a few more veggies and a little less fat. )

1 lb lean ground beef (or turkey or combo)
1 large onion, chopped (about 1 cup)
1/2 - 1 cup shredded Cheddar cheese (reduced fat is fine)
1/2 can petite diced tomatoes or 1 can rotel tomates - drained
1/2 cup Bisquick® mix
1 cup skim milk
2 eggs (or equivalent in Egg Beaters)


1. Heat oven to 400°F. Spray 9-inch glass baking dish with cooking spray. 2. Cook ground meat with onions. Drain, rinse if desired.
3. Mix diced tomatoes & cooked ground meat. Spread meat mixture in baking dish. Top with cheese.
4. In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour over meat, etc.
5. Bake about 25 minutes or until knife inserted in center comes out clean.

Impossibly Easy Taco Pie from Betty Crocker - again, follow link for 'official' recipe ... below is my version

1 pound lean ground beef (or turkey or combo)
1 medium onion, chopped (1/2 cup)
1/2 - 1 envelope taco seasoning mix (or your own blend of taco spices)
1 can Rotel tomatoes w/ green chilis
1 cup skim milk
2 eggs (or Egg substitute)
1/2 cup Bisquick® mix
1/2 - 3/4 cup shredded Monterey Jack or Cheddar cheese or Mexican 'blend' or pepper jack
Salsa (any variety)
Light or fat-free Sour cream, if desired

1. Heat oven to 400ºF. Grease 9-inch glass baking dish. Cook ground beef and onion in skillet over medium heat, stirring occasionally, until beef is brown; drain. Stir in seasoning mix (dry). Spoon into pie plate; top with rotel (or just chili peppers if you don't like tomatoes.)
2. In separate bowl, stir milk, eggs and Bisquick mix until blended. Pour over meat mixture.
3. Bake about 25 minutes or until knife inserted in center comes out clean. Sprinkle with cheese. Bake 8 to 10 minutes longer. Cool 5 minutes. Serve with salsa and sour cream.

You can also add a can of (well drained) black beans &/or corn to the meat mixture. I don't particularly like adding corn because it has a slightly sweet taste that I find a bit odd with the spicy taste, but if your family likes corn in tex-mex type dishes, they might like it.
