I would shred some roasts for bbq beef or italian beef, cook up stew meat as stroganoff, or goulash and freeze, thin slice and cook some for fajitas/tacos and freeze.
A friend just put up about a 1/4 of beef in her freezer -- might be closer to a 1/2. Anyhow, her teenage dd left the freezer ajar and everything defrosted (there was only beef in this freezer). It's still cold, but since it is fresh, it is already dripping from the packaging. She had 35 packages of meat. Only about a dozen is ground beef which is easy enough to deal with -- cook it all and then freeze for later use. But, what to do with 25 packages (probably close to 100 lbs of total meat) of assorted steaks and roasts?
I offered to help if she needs it so I need ideas.... I was thinking of cooking a few roasts to shread for freezer to use later as barbecue beef, but what else?

Omgosh my sister had this happen to her many many years ago.
I would throw the roasts in the oven and cook them and then freeze them. The steaks, I'd broil or fry them and freeze them.
To reheat the roasts, she could put them in a crock pot and the steaks I would just use them in some sort of stew or casserole when she pulled them out of the freezer.
i'd make a huge pot of all meat chili but I'd also repackage and refreeze the steaks if they were still cold. i don't think the quality of the meat suffers that much. The same thing happened to me about month ago except my freezer was full of chicken and turkey. I didn't even bother to repackage it I just refroze it and I can't tell the difference.
