I have been making deer jerky for years. My family just got me a huge commercial dehydrator cuz they love jerky so much!!
Anyway, I have used many recipes over the years but I have learned that if you add in the sauces and seasonings that your family likes and uses on a regulr basis that that works best.
I no longer measure any of my ingredients. I will give you a list of some of what I use. I put my sliced meat into a gallon ziplock bag. Fill about 1/2 way. I let it marinade for a min of 24 hrs. The longer the better the flavor.
First I sprinkle with seasonings:
Cajun seasoning
Mccormick mesquite seasoning
Sprinkle meat zip bag with air in it and 'squish around' to distribute spice.
Second add sauces
Liquid smoke- just a lil
Worcheshire sauce- lil bit more
Soy sauce- Bout the same
A1 cajun marinade -1/4 bottle
World harbour Jerk sauce -about 1/4 cup
BbQ sauce (any kind)- 1/2 bottle or more if meat not fully covered.
NEXT Seal bag with air in it. 'Squish around' Marinade in fridge til ready.
I have recently started laying out marinaded meat and again sprinkling with spices before puting in dehydrator. This gives much stronger flavor.
We like HOT stuff so part of last batch I used some tabasco sauce. It was GOOD but spicy!!
All sauces are optional. I have also used heinz 57, I could go on and on..
My advice would be to start with flavors you like and just play with ingredients.
Thats how I perfected mine. And our friends come in droves after we get a deer ,wanting jerky. (yes I'm bragging LOL)
