It's just my boyfriend and I in the house, so I don't need a huge stockpile. I bought 12 boxes of cake mix, 4 frostings and 4 SC milk.

Seems like a ton for the two of us! But, the exp date is all 1 year +. I'm thinking about using some of the cake mix for holiday baking - I leave a trail of baked goods behind every where I go during the holidays. But, sort of feels like it ruins the point of giving away homemade to use cake mix!
I did make some dulce de leche "secret surprise" cupcakes yesterday. I'd give them about 3.5 stars, nice for a change but not my favorite. BF loves caramel and ddl so these were for him.
(I didn't measure so these amounts are approximate!)
1 box yellow mix - add 1/4 c flour
Eggs and oil as called for on the box - sub milk for 1/2 the water.
1/2c dulce de leche (nestle's or make your own from the SC milk)
1/4 tsp vanilla extract
splash of milk
1/4c confectioner's sugar
Make the cupcakes, drop them into paper lined cups, then drop about 1/2 tsp of dulce de leche into the center of each one. Save 2tbsp for drizzle. Bake 15-20 min until golden.
Make a dulce de leche drizzle: milk the remaining leche with the vanilla extract and a little milk so that it's drip/drizzle-able consistancy. Mix in the 1/4c confectioner's sugar.
Frost them with whatever you like (chocolate, vanilla, cream cheese, white), then drizzle the dulce de leche mixture on top.
I'm also curious about what everyone else likes to make! I did not grow up with mixes, so it's new territory for me.
