    Default Help me use my Ragu Stockpile

    Hi,

    I have about 60 jars of Ragu in my stockpile that are set to expire. I know I still have a little bit of time to use them, but I was looking for creative ways to use them in recipes besides spaghetti and meatballs. Does anyone have any good ideas for me to put this Ragu Spaghetti sauce to use?

    In the "what's for dinner?" thread, if you scroll back a few pages, there is a recipe for unstuffed peppers that sounded good.

    lasagna, baked ziti, stuffed shells (could freeze most of these)
    add spices and use it as pizza sauce
    make breadsticks and use it as dipping sauce
    we use a lot of sauce just for lunches around here--my kids like frozen tortellini (cooked of course) with sauce for lunch. It packs well in a thermos. =)

    It all depends upon the flavor of your Ragu, but these are tomato sauce recipes:
    Lasagne
    Chicken parmesan
    Chili (add chili spices to plain sauce)
    Mostaccioli (Ground cooked italian sausage, mushrooms, green peppers, cooked mostaccioli or penne + 2 cups mozzarella cheese mixed together - some people bake it)
    Cabbage rolls
    Stuffed peppers
    Spanish rice (seasonings available)
    Chicken Cacciatore
    Ravioli (can make own or get frozen cheese or sausage stuffed)
    Pizza (regular, bagels, bread)
    Beefaroni (use elbow noodles)
    Sloppy Joes
    Meatball sandwiches

    That's all I can think of right now!

    I make chili with spaghetti sauce , chicken Parmesan, cheese stick use spag sauce as a dipping sauce. I have also used some sauce making things and freezing meals ahead. Small batches of meat balls with sauce already in there to pull out on a rushed night making spag. and meat balls or meat balls subs. I try to mix it up a little so it doesn't seem like we are having the same things all the time. People thought I was crazy last year when I told them I had 150 jars of sauce and they way I looked at it 3 jars a week it would last us a little over a year, and I would be able to use it before it expired. I still have a good amount of it left but when I was buying it I took care to purchase the longest dates out as possible and took care stocking it in my cupboards so it was used with the earliest dates first.

    Cook up some boneless chicken and pour some over the top of it then some shredded cheese place a lid on it with heat off until the cheese melts.

    Cook some beef for mexican food night use some to flavor the beef.

    I use spaghetti sauce to make a poor man's Minestrone. I water it down to make the broth. My family loves it!

    Do you eat fish? One of my "quickie" meals is to take a few tilapia fillets, and put them in a baking dish with sliced mushrooms and onions under them. Season it all with some Italian seasoning and salt...then cover it with spaghetti sauce and bake it.

    Also...if you're worried about it expiring, could you put it in freezer containers, and freeze it?

    I could have made this exact same post. I have a few cases of ragu that I got on a deal when we were using at least a few jars a week and then we got burt out on it!

    Also keep in mind that it will still be fine up to about 6 months after it expires..I would use it anyway as long as it smelled and taste good. The expire dates are not really expire dates they are best used by dates...
