We use Ragu (grandmas secret garden) as the sauce on homemade pizzas. Its WONDERFUL! Just make up some dough (you can find a simple flour sugar salt yeast recipe via google) roll it out then we cook the dough on the grill. SO AMAZING! Im addicted.
Pasta e Fagioli: Brown some ground beef or italian sausage, and 1 chopped onion, then drain. Cook 1/2 box of ditalini pasta, mix with 1 can of kidney beans and 1 can great northern beans and a jar of ragu. Add a little water and red wine.
Serve with crusty Italian bread.

Just made a great meal. Used egg noodles, cooked hamburger, mozz cheese and ragu, layered each and then topped in pepperoni. Cover with foil and bake for 30 minutes at 350, uncover and bake 15 more minutes. Then let it set for 20-30 minute to cool!
A sure fire way to use up lots of sauce is to make a large batch of meatballs. I did that this morning, made 84 meatballs, into the crockpot with 4 jars of sauce, let them cook on low for 8 hours or so. Then I'll take them out and let them cool.
Will vacuum seal portions of sauce with meatballs and freeze for future meals in a hurry, just add past or make meatball subs out of it.

Upside Down Pizzza half a jar of spaghetti sauce plus browned sausage, burger or ground turkey in a casserole dish. Cover with mozzarella and pepperoni. Put crescent roll dough brushed with garlic butter on top. Bake @ 400.
This is going to sound really strange, but its actually very good and cheap! My hubby (before I even met him) was on a major budget. He would take spaghetti sauce, hamburger and peas and cook them up together. I add parma cheese to mine, he doesn't like cheese! It really makes for a cheap meal, plus I've found you can "hide" veges in it pretty easily!
If I had 60 jars, I would just donate most of them to a food bank.
You could try using them in some casseroles or meatloaf type dishes.
