    Default Perfect for eggs!

    This week, Kroger has 18 count eggs for $.99. I decided to freeze some, since we don't eat that many. You know the little cups that the frosting for Pilsbury cinnamon rolls come in? Totally perfect for freezing large eggs! I cracked half a dozen into the little cups, put them on a foam plate, covered them with another plate and froze overnight. I was a little worried that they wouldn't come out, but I ran hot water over the bottom and then rolled them between hands, they popped right out. I stuck them in a freezer bag, and started the next batch. Awesome!

    you will use these for baking? gosh i read up on this when i got chickens but i forgot the quality of thawed eggs for fresh easting, but baking i would imagine wouldnt change the quality.

    I have too many, ive been throwing them out. ive been sick and generally unruly, so i havent donated any lately

    Several years ago you could get eggs free at Target with coupons. I bought 24 dozen and could get a dozen eggs into one fairly small freezer container (24 oz. I think). I just beat them slightly and poured into the freezer container. They were fine for scrambled eggs, omelets, cooking, etc. If I remember right it was almost exactly 1/4 c. that would equal two eggs. I some for almost a year and they were still good.

    Today I got a dozen Jumbo eggs for free at QFC. Was supposed to be Large but they were out of those and the Extra Large. So they gave me the Jumbo! We don't eat many eggs either. But husband does and he will be home at the end of the month. Hopefully they'll still be good then.

    Yeah, the first time I froze eggs, they came out totally weird. I didn't know at the time that you had to mix the yolk into the white! So, for a couple of weeks, we had scrambled eggs with little yellow lumps in them. Now, I mix the yolk into them before I freeze them. I don't generally use them for baking, since the yolk seems to change. Most of the time, we just thaw them to cook for breakfast. I use a little 3" egg pan that I bought for $2 at Big Lots, and make our own egg Mcmuffins.

    Nice to know. I throw a lot of eggs out. I didn't realize you could freeze them!
