Here's a recipe that is easy, plus uses items that you probably have Q's for; it's not Holiday Time at my house without these. The best thing is that you can double the peanut butter and tweak the other ingredients, +- to taste.
Peanut Butter Balls
1 16.3 oz. jar of creamy peanut butter
1/2 stick of butter, softened
Approx. 1 box of 10x powdered sugar, I do this "to taste" so I usually don't use the whole box, but ymmv
2 to 4 cups of Rice Krispies
1 12 oz. bag each of semi-sweet and milk chocolate morsels
Mix the butter and peanut butter with your mixer, until well mixed.
Add powdered sugar to taste and mix well.
Mix in Rice Krispies (2-4 cups or so), by hand or on lowest speed of mixer, until you have your desired level of crispness.
Refrigerate until dough can be worked into balls (about 1 hour or so, Play-Doh with Rice Krispies consistency

) or you can put it in the freezer if you're in a hurry....no....I've never been in a pb ball panic.....

Roll into bite-sized balls and place on cookie sheet lined with parchment or wax paper.
Place in fridge to cool while you combine chocolate chips.
Combine 3/4 to 1/4 ratio of semi-sweet to milk morsels (or whatever ratio you prefer) and melt. You can use a double boiler or use the microwave, just watch and stir well if using the micro.
Dip balls into chocolate mixture; I use a tablespoon and roll each ball in the spoon of chocolate.
Place back on cookie sheet.
Refrigerate to harden chocolate and to store.
If you'd like a more concrete version, I have the original recipe from my 1985 high school home-ec class, I'll go dig it out!
Here's another I just thought of; saw this at a Pampered Chef party and they were pretty yummy and easy!
1 18 oz. tube of prepared sugar cookie dough
1/2 cup of peanut butter
1 bag of Kisses candy
Break apart the cookie dough and mix the peanut butter into the cookie dough until completely blended. They used the PC cookie press at the party, but any type would do, or I imagine you can do them as a drop cookie as well. Bake in 350° oven 10-12 minutes until golden brown; this could depend on what thickness you make the actual cookie. Unwrap kisses while cookies are baking. Remove from oven when done baking and immediately place kiss in center of each cookie. Cool on cookie sheet for 2 to 3 minutes then move onto cooling rack.
