We went earlier this year and, like any HUGE business (because at the end of the day, that's what it is, a business) there were super nice folks and not-so-nice folks. More nice than not, though, definitely. As was previously pointed out, these folks work very hard and deal with some of the most unreasonable requests daily - that's got to get old. But, as a rule, they keep a smile on through it all and try to help you as much as they can, IMO. It was my son's B-day and they gave him a button that said so - everywhere we went, the cast members all wished him a Happy Birthday and one of the vendors at Disney HollyWood Studios even gave him a free ice cream! He thought it was super cool!
We also had good interactions with the characters in costume - some were more playful than others - Chip and Dale were AWESOME (the ones at Epcot, near Space Mtn - in the "robot" type outfits)! They danced with DS and signed his autograph book with personal comments. He still talks about them dancing with him - LOL!
As far as dining, we had excellent experiences with that as well, I did make reservations for most of our meals and the only time we had to wait very long was at the Prime Time Cafe in HollyWood Studios.
I also can't say enough great things about the Jedi Training Academy - they run it so smoothly and the kids have SO much fun! If you go, make sure to go there as soon as you get in and get in line though, they only take somewhere around 100 kids per day so it's tough to get in but so worth it. DS really enjoyed it.
OP - I am sorry you feel so let down but it sounds like maybe your expectations were a little high to begin with. As far as the GC, that is definitely frustrating and i hope you can get something worked out on that end.
