cut half of it up like beef stew meat. brown it then and use it in chilli beans and it has a way better flavor.
also you can look up "grits and griads"(I think that is the spelling) on foodnetwork.com this is a paula dean recipe and it is so tasty! but I didn't put as much spicy stuff in there because of my kids. either way, it was delicious and a big hit for the family! or if you are not a fan of grits then make the griads but put them in tortilla shells, this is called carnitas. add some salsa and cheese on top and viola!
