CHEF Bricks and Bricks of cream cheese!

What is everyone going to do with thier cream cheese? Between the Organic Valley, and the Philly with the $5OYNO cat, I have a lot of cream cheese.
Here is something that came to mind to make -I have actually made it before and are having it tonight for dinner. If I recall, I think this is Panera's soup recipe (or similar)-or maybe another bread type resturant.

Cream Cheese Potato Soup

Ingredients

· 4 cups chicken broth
· 4 cups potato, peeled and cubed
· 1/4 cup onion, minced
· 1/2 teaspoon seasoning salt
· 1/4 teaspoon white pepper
· 1/4 teaspoon ground red pepper
· 1 (8 ounce) package cream cheese, cut into chunks
Directions

Combine broth, potatoes, onion, and spices.
Boil on medium heat until potatoes are tender.
Smash a few of the potatoes to release their starch for thickening.
Reduce to low heat.
Add cream cheese.
Heat, stirring frequently, until cheese melts.

Another tasty thing to make with cream cheese is Oreo balls. Pretty much, it's just a bag of Oreos and a brick of cream cheese. Either crush your Oreos in a plastic bag or use your food processor. Then mix the cream cheese in. Make into balls and then let them chill for an hour. You can dip them in almond bark or those candy coating chips or chocolate chips that have been melted. They are SCRUMPTIOUS and always popular at parties.

The regular bricks of cream cheese freeze and thaws very well. The fat free tends to not freeze as well and when thawed, looks like it has curdled. :shrug7:

I've always heard that freezing cream cheese effects the texture so that you wouldn't want to use it on your bagel. Is this incorrect?

I am not sure about that but I thought of another thing. I make a green goddess dip (like a knockoff from Melting Pot) and use it on salmon and when we have fondue. The last time I made a bunch and froze it, defrosted it today and it was super delish!

I agree...although, I wonder if you were to really mix it up first if that would fix it? I just the frozen stuff to mix with other things.
