The members of her work were trying to do something nice for their manager, which is always a good thing, to do nice for anyone. However, they chose to do a certain food item and as such it's really kind of their responsibility to remember and find out things about their food preference. If you can respect the person enough to think that highly to do something for them, then hopefully you can also respect them enough to not embarrass them by not taking into account their preferences.

I most definitely say "Merry Christmas!" Since that is what I celebrate, it's what I say. I'm not celebrating some generic holiday. I'm celebrating a day set aside to honor the birth of Jesus Christ. Happy Holidays could apply to so many days. Merry Christmas only applies to one in particular.
When we say "Happy New Year" referring to January 1st, is it offensive to all those that celebrate it a different day? Probably not. Different people celebrate different occasions. Why should others belittle or take away the joy from celebrating those occasions by imposing with the P.C. business?

If I know that someone celebrates a different holiday or takes offense I will take care not to say it to them.
I agree with other people on the sentiment that if someone said "Happy Kwaanza" or whatever to me I'd say it right back to them and be glad that they took the time to share with me the sentiment that is important to them. I can appreciate that other religions/non-religious groups don't celebrate the same holidays as I do- or they have a different meaning for them but I certainly hope that someone wouldn't take offense to my obviously well-intended well-wishes if they are different than me. I certainly wouldn't.
