Strawberry Roll cake
Step one
In a small bowl put these DRY ingredients then mix them and set them aside
1 cup of All purpose flour (no need to sifted)
1/2 tsp baking soda
1/2 tsb baking power
1/4 tsp salt
Step two
In a large bowl mix these ingredients with mixer on low
3 large eggs
1 tsp of strawberry extract (not a must have but makes for better taste)
1 cup granulated sugar (regular sugar)
Mix well
(at this point you can add about a little pink food coloring if you wish to make it look more the strawberry color.)
Step three
add 1 cup of frozen mashed up strawberries (I beat mine with the mixer to get out any pices) to the wet ingredients and mix on low until well mixed
Step four
Pour the dry ingredients a little at a time into the wet ingredients mix add mix until all the dry has been added in.
use a 15 inch X something jelly roll pan(you probly use this for a cookie sheet) it is long and has about a one inch side all the way around it..lol I did not know that was what it was called.) Oil it down and then place a pice of wax paper down (leave the so its higher than all the sides of the pan) oil the wax paper with oil and sprinkle it with flour. Pour the cake mixture in and bake for about 15 minutes on 350 or until it is done.(LOL if you are sticking your finger in to taste at this point it well taste a little to sweet at this time dont worry it wont when done).
while this is cooking make the filling for your roll
One 8oz pack of cream cheese
6 TBSP of butter (not stick kind)
1 to 2 tsp vanilla extract
1 cup of Sifted powder sugar (for thick mixture add a little more powder sugar) you can sift with one of the little metal like tea strainers(old school stuff) with the tiny holes in them, if you dont have a swifer.
Mix on low with mixer, beaware that this can be messy so take it slow and easy. I mash the ingredients together some by hand first that helps some.
Set a side
When the cake is done have a THIN kicthen towel with some powder sugar sprinked on it where you will lay the cake down ready. (do this ASAP when cake come out of hte oven)Turn the pan over onto the powder sugar and then pull the wax paper away. Roll the cake slow and easy up into the towel(not real tight but not lose either, let cool for about 20 minutes(bakers rack is great here but will be fine without one)..after cool unroll easy fill with the filling you made and roll the cake back up.
You can sprinkle the top with powder sugar, then wrap with plastic wrap and freeze. The colder the better.
You will not find this anywhere else I have been playing with my cakes for two days now to come up with something new(which I try to do each year) my twins wantted strawberry so that is what they got. This is very good!
By the way I also just learned to make the rolled cakes in these two days.
