If you want to do gift cards, how about to a convenience store that also sells gasoline? Around here, that would be Wawa, Turkey Hill, or 7Eleven. He could use it for gasoline or for some of the specialty drinks or sandwiches they have inside.

anything that is made by the student....even just a letter of appreciation...
is he a sports fan? anything specific to his hobbies..
grocery store gift cards...teachers have to eat too!

Thanks so much for everyone's suggestions. I'm going to try to get some ideas what restaurants he likes and get him a gift card and if that doesn't work, will get him a gas card.
He's such a great guy though I'd like to find something special and unique.

I just re-read your original post and noticed that this gift is for a high school teacher. That's wonderful. I worked in a high school for many years, and it was rare for a high school teacher to get a gift. It seems the gifts stopped -- at least in that area -- after elementary school.

Years ago we actually bought some of those tiles and my oldest daughter was going to draw on them (she'd had years of art lessons) and make gifts for her teachers but she never followed through.
We wouldn't have thought about putting cork on them though. Really a great, original idea.

Make a gift basket of goodies for dinners...use your stockpile items...stuff that is easy to whip up...Tuna, Spaghetti Sauce, Canned tomatoes, etc...then include fast/easy recipes using the items you included in the basket for him to make (not sure if he is married) This would be real good for a bachelor.
