    Share your favorite Thanksgiving recipe for a chance to win a $25 Amazon Gift Code! The rules are very simple:

    Hi there! My very favorite recipe is baked sliced cinnamon apples. I love these as a side, but some people love them a la mode!

    10 apples cored, peeled and sliced thin
    2 teaspoons cinnamon
    1 cup brown sugar
    2 teaspoons lemon juice (optional)
    1 dash salt
    1 dash nutmeg

    Place peeled, cored and sliced apples in a mixing bowl and gently mix all the ingredients together.
    Put apples in a non-stick pan, and cook covered for 45 minutes at 375°F.
    Stir at least once every 15 minutes.
    Once they are soft, cook for another few minutes to thicken the cinnamon sauce.

    To be honest, I like to put everything into my baking dish and then mix it since there is less to clean up.

    I borrowed this recipe from Recipezaar, but this is exactly how my Granny always makes them, too, so YAY! I love these!

    I just isn't Thanksgiving for me without these:


    Roasted Sweet Potatoes
    (adapted by me from a recipe I got from O magazine)
    4-5 lbs sweet potatoes (here in the south we just call 'em Yams) wash and place in a baking pan or glass casserole. Pierce 3-4 times with a small paring knife. Roast, uncovered at 325 for 60-90 minutes, until they are tender.

    Let cool completely and remove skins. If you slice them longways, the skin should just slide off. Cube, returning to casserole dish, sprinkle with salt and dot with butter,
    no sugar needed. Store in refrigerator up to 3 days, and reheat, covered at 350 for about 20 minutes.

    I love these, they are just so sweet when you roast them this way, with no added sugar needed, and they can be made the day before when I am making pies. Of course you can add a dot of brown sugar with the butter if you want!

    My newest favorite recipe...

    Pumpkin Spice Muffins

    Ingredients:
    28 ounce can pumpkin
    spice cake mix
    1 egg

    Directions:
    Mix all ingredients together. The batter will be very thick. Spoon batter into greased muffin pans. Bake at 350 for 17-19 minutes.

    Yield:
    18 muffins

    *These muffins are great with cream cheese or even hazelnut flavored cream cheese.

    This is so Easy and Good. That's why it's my favorite. Everyone always wants more.

    3-4 Cans Sweet Corn. ( Mexican Corn is good too)
    1 Package Cream Cheese. Room Temp.
    1 onion (optional)
    Dash dry ranch (optional)
    4 sliced fresh mushrooms (optional)

    Cook Corn, while that is cooking. In a seperate pan cook onions and fresh muchrooms until carmelized. When Corn is cooked, drain. Put Cream Cheese (room Temp. is important), Corn, dry ranch, back in pan you cooked corn in. Put heat on low. Mix good. Add Mushrooms and Onions. Serve when cream cheese is warm and melted.

    Default Baja-Style Corn

    We had a non-traditional Thanksgiving dinner last year and everyone loved this recipe. Here is the original recipe for 4 servings (but I actually doubled the ingredients and cooked it in the crock pot and it turned out great):

    Baja-Style Corn

    2 tablespoons butter
    2 cups loose pack frozen whole-kernel corn
    1 can (10 ounces) diced tomatoes or fresh diced tomatoes
    1/4 cup chopped fresh cilantro
    1 tablespoon of lime juice
    fresh cilantro leaves optional

    1. In a large skillet, melt butter over medium-high heat. Add frozen corn to butter; cook 4 to 5 minutes. Add diced tomatoes and bring to a simmer.

    2. Remove from heat and stir in chopped cilantro and lime juice. Garnish with cilantro Leaves (optional).

    Pink Lemonade Pie - YUM!

    Ingredients
    1 can Sweetened Condensed Milk
    1/2 can Frozen Pink Lemonade
    1 16oz. Tub of Cool Whip
    2 Drops Red Food Coloring
    2 Graham Cracker Pie Crusts

    Directions
    Mix sweetened condensed milk, pink lemonade and food coloring in a large mixing bowl until well blended. Fold in cool whip. Pour equally into the pie crusts and refrigerate at least 2 hours before serving.

    Makes 16 servings.

    It's so nice to have a pie recipe that can be whipped up while the turkey is occupying the oven!
