    Default Yummy pineapple sauce for Easter ham

    I cooked up some ham steaks yesterday and found a really good pineapple sauce recipe that you can serve on the side. The original recipe calls for 1 whole cup of brown sugar but I didn't make it nearly as sweet. Actually I didn't really measure anything except the water but luckily you can just taste it before adding the cornstarch and see it needs more brown sugar or anything else.

    1 large can crushed pineapple in its own juice; undrained
    1/2 cup brown sugar (start with less if desired)
    3/4 cups water; divided
    1 tablespoon soy sauce (I didn't measure, I used a packet leftover from Chinese takeout)
    1 tablespoon ketchup
    1 1/2 teaspoons yellow mustard
    2 heaping tablespoons cornstarch

    Combine the pineapple, brown sugar, soy sauce, ketchup, mustard and 1/4 cup of the water in a saucepan. Bring to a boil, cover, reduce heat and simmer 10 minutes. Combine the cornstarch with 1/2 cup cold water and add to the pineapple mixture. Bring to a boil and cook about 2 minutes or until thickened, stirring constantly. Serve on the side over ham slices.

    yum i make pickled eggs every easter. When I was pregnant I got up in the middle of the night and had to eat a pickled egg almost every night for the last 2 months

    Bunny Biscuits


    Ingredients
    1. (1) 8 count can Pillsbury Grands Biscuits ( or more if you desire )
    2. Raisins & / or dried cranberries
    3. Slivered almonds
    4. 1/2 cup sifted Confectioners' sugar
    5. 1 tablespoon milk
    6. Red food coloring ( used to tint icing pink )

    Directions
    1. Preheat oven to 375 degrees.
    2. Lightly coat a large cookie sheet with vegetable spray
    3. Separate biscuits & place 4 on prepared sheet.
    4. Using kitchen scissors cut the remaining four biscuits in half & lengthen to form the ears.
    5. Carefully attach ears to whole biscuits to complete the bunny head.
    6. To make the faces; use raisins or cranberries for the eyes, nose & mouth; & almonds for the whiskers.
    7. Bake 11 to 15 minutes or until golden brown.
    8. Using a wide spatula gently remove bunnies to a wire rack to cool.
    9. In a small bowl, combine powdered sugar, milk & food coloring then frost each ear pink.
    Yields 4 large Bunny Biscuits per 8 count can

    Best served warm

    Gotta have a leg of lamb and rice pilaf for Easter. These are in remembrance of my sweet sister who passed away in 1990 and my dear husband who passed away in 2003. Lamb & pilaf originated from my dh's family and he brought it to our family and my sister went nuts over it so we had it every Easter since. It means more now that they're both gone but the tradition lives on.

    Rice Pilaf:

    3/4 stick Land O Lakes Butter
    Fist full of vermecilli noodles (about 1/5 of a box)
    2 cans of chicken broth (brought to boil point in seperate pan with a boullion cube or two and salt)
    1 empty broth can filled with Uncle Bens converted rice (rinsed)

    melt LOL butter in pan with tight fitting lid
    Add broken vermacilli and stir until golden brown
    Add rice and stir until golden
    Add boiling broth

    Give a quick stir, reduce to lowest temp and cover. When almost all the liquid is absorbed, turn off heat. Give a quick stir. Let sit for 10 - 15 minutes still covered.

    Serve with leg of lamb that was marinated the night before in Italian salad dressing in a cooking bag then bake in the oven Easter day. When making yourself a plate, be sure to take some of the drippings from the lamb and drizzle over your rice pilaf. YUMMY

    Deviled Eggs Supreme:

    Boil eggs and such as normal. Prepare the yolk filling using as much Miracle Whip as you like. Add small bits of diced ham or bacon to the filling. Veggies are a great add-in also...no one noticed the cauliflower I added last year... LOL I basically shaved the cauliflower since you want tiny pieces.

    You will end up with a lot of filling leftover that works great as a cracker spread.
