Default Shrimp Creole

Shrimp Creole
Serves 6

Ingredients
2 T butter
1 large green pepper, diced
2 ribs celery, sliced
1 medium onion, diced
1/4 t garlic powder (or 2 cloves minced)
1/8 t red pepper flakes
1/2 t dried oregano
1/2 C water (only if needed)
1/2 t dried parsley
1 bay leaf
2 cans diced tomatoes with green chiles
1 lb shrimp

In hot butter, cook peppers, celery, onion, oregano, garlic, red pepper, parsley, and the bay leaf until tender- stirring often. Cook for 10 minutes.

Add tomatoes and cook uncovered for 10 minutes. Add 1/2 C water if needed to get to good consistency.

Add shrimp and bring to a boil. Cook covered over medium heat for 10-15 minutes or until shrimp turn pink and opaque.

Serve over rice. Add more red pepper flakes if you want a spicier creole.
