ISO: EASY recipe for seafood enchiladas

My stepdaughter asked for enchiladas for dinner on her birthday (Tues). I normally make some with meat for them, and some with mushrooms and peppers for me. But, I want to try something new this time (just for my portion of them). I've seen recipes for seafood enchiladas, using imitation crabmeat and some sort of cream soup, and cheese, etc.

Does anyone have a recipe that they've actually made? I'd really appreciate it if you could share!!

The Campbells Soup web site has a really easy recipe for this. I have made it twice and everyone loved it. I spiced ours up a little bit , it seems easy to change around a bit.
