I thought so too. How can I do it? Until my husband got in the military. I miss him so much when he is gone, but the best part is that it gives me a break since I am trying to make fancier meals when he is around. You just learn to get things done because noone is around to help. It's not that bad as it looks. I love spending time with my kiddos and they tend to listen to me more when DH is gone.
Anyway, I think you got some great advice as far as meals go.
Cook ahead when the kids are asleep - and then microwave it later.
Mark's been gone for 6 months now. We've had lots of nights of chicken nuggets, soup, sandwiches.
Dinner doesn't have to be complicated....get the 4 food groups in and call it good. It doesn't have to be hot.
Apple slices, carrot sticks, a soft pretzel, a cheese stick, a glass of milk....dinner!
