Thanks to everyone for all the advice! Thankfully it is now completely cleared up. I went out and bought the anti fungal cream and applied it one time, but it was already starting to heal up with just the A&D ointment. I really think this one was related to the food he ate.
But I tell you what this thread will be a great reference for me and any other moms who find a red baby's bottom that is hard to get rid of! You guys are great!!

I agree. Vaseline is a super-cheap cure-all! And we all have baking soda around the house. We had a bad burn and they told us the vaseline for a couple of days and if it doesn't clear up or it gets worse, call back. I didn't have to call back.

I used A&D ointment on my oldest daughter when she was in diapers, but I used Bag Balm -- that stuff in the green metal tin that farmer use on cow udders -- the most. It was cheap, worked well, and I didn't have to fiddle with a slippery tube while holding down a wiggly baby with one hand.

Bag Balm is mostly petroleum jelly mixed with lanolin, so anything similar like Vaseline and A&D ointment would probably work just as well.

I am not a momma, but I am now a grandmomma (my hubs daughter had a baby). Wanted to put this out there, because I saw it first hand. My DIL just had a baby and had been dealing with diaper rash for two weeks. She had tried all of the over the counter remedies, desitin, etc. and nothing was helping. We went out to visit them this past weekend and I noticed the lil guys (Wyatts) bum was actually bleeding it was soo bad. They finally took him into the emergency room (they both work for the hospital system) and the doctor on duty told them to do the following:

Mix neosporin with one tub of cream cheese and create a paste. They came home and took one of the large tubs of cream cheese with 4 small tubes of neosporin. Within one and 1/2 days of applying this mixture everytime they changed his diaper, the rash was gone. Apparently the cream cheese changes the acidity of the urine.

this happened once to my youngest. she was teething and the rash got so bad her little butt was bleeding....so i let her go naked. no diaper and a little air drying. an hour here and an hour there. a day of doing this, and she dried out and the next day she was much much better.

My DD has extremely sensitive skin, she get's excema and even would break out in a rash from the table paper at the pediatricians. The only thing she can use {I still have to use this on her at times} Is Aquaphor, it's made by Euserine(spelling?). Other diaper creams {including Boudreaux's and Burt's Bees} made her break out worse...what a nightmare that was.}. My MIL found that it healed the cracks on her finger tips after using it on my DD, so she keeps a tube in her purse. I found a thick layer applied over night would heal her bum {it would break open like bed sores...so painful for her}. I tried using just petroleum jelly and while it helped in a pinch, it was not as effective.

Boudreaux's Butt Paste is the best cream IMO. Also, breast milk is great for diaper rashes and other rashes such as those caused by eczema.
