    I sneek tofu into foods. Mix it with ricotta cheese with a hand mixer and use in lasagna/manicotti. Blend soft tofu with yogurt and fruit and splash of milk in a smoothie. There is even tofu cheesecake which tastes very yummy. You can cook tofu like you would chicken strips/nuggets too but my kids are not that hip on it. So I hide it. As far as beans...maybe refried beans (you can get canned vegitarian).

    If he has a strong gag reflex for some of the foods you offer, talk to his dr about having him checked for sensory issues. My oldest daughter is what I term as an "extreme picky eater" and has been since about age 2. She has a very strong gag reflex and when she tries to eat certain foods, in her case it's too many to list but includes hamburger, etc., even the slightest bit, can cause her to run to the bathroom. She is what is termed as a "supertaster" where many foods that you and I would have no problem with actually have a very strong or bitter taste to her. She's also one of those that will go nuts if one food is touching another, unless it's on pizza LOL

    my kids love tofu smoothies...but don't ask them about it
