Default MJ’s Mushroom, Bacon, and Swiss Quiche

MJ’s Mushroom, Bacon, and Swiss Quiche

Pastry for 1 piecrust
4 bacon slices
1 pound mushrooms, thinly sliced
¼ cup butter or margarine
2 Tbsp minced green onions or 1 Tbsp dried chives (optional)
¼ tsp salt
1/8 tsp pepper
4 eggs (egg substitute okay)
1 can evaporated milk, (nonfat good)
¾ tsp salt
1 cup shredded Swiss cheese (about ¼ pound)

Preheat oven to 425-degrees. Prepare piecrust and place in 9-inch pie pan.

In skillet, fry bacon slices until crisp and brown. Drain on paper towels and crumble. Spread in bottom of piecrust.

With wire whisk, beat eggs, evaporated milk, and ¾ tsp salt. Stir in swiss cheese and set aside.

In skillet over medium high heat, melt ¼ cup butter or margarine. Add sliced mushrooms, onions, ¼ tsp salt and pepper. Cook, stirring often, until vegetables are tender and liquid is evaporated, about 5 – 10 minutes.

Add mushroom mixture to egg mixture and mix well. Pour into piecrust and bake for 15 minutes at 425-degrees; turn oven control to 325-degrees and bake another 35 minutes. Quiche is cooked when knife comes out clean. Allow to cool 10 minutes before serving.
