Default Sour Cream Eggs

12 eggs
1/4 cup milk
1 cup sour cream
1/4 - 1/2 cup onion finely chopped
Ham, cubed, or crumbled bacon
1 tbsp butter
Salt to taste
Saute onion in butter. Beat eggs and milk to a froth. Add sour cream and continue beating. 425°

For years I've added onion powder and sour cream to my eggs when I make scrambled eggs. The kids don't like onions so I can't put "onions" in them. The sour cream makes them fluffier. I saw recently a Paula Deene (gotta love her, ya'll) say she uses sour cream too!

I cook mine in cast iron only (perfectly seasoned and oiled with half oil, half butter)... get the pan good and hot, then turn it to low and dump the egg mixture in... get out your spatula and use it like crazy. I will sometimes have to take the pan off the burner (depends on how many eggs you cook at once). The idea is hot and fast... for perfect eggs.

By the way, I HATE eggs... can't eat them at all without gagging... but I am an excellent egg maker! lol
