What to do with all this feta cheese?

I second the feta and spinach salad idea! My favorite salad is feta, spinach, apple and walnuts with raspberry vinaigrette! Awesome combo!

I love feta and tomatos in a pita, zap it in the microwave for about 30 seconds. Excellent lunch or snack!
