Default Homemade Cottage Cheese

Disclaimer: I haven't tried to make this yet. A friend sent it to me and I thought it would be great to try for next time milk is free/cheap.

Ingredients:

1 Gallon 2% or skim milk
1/2 cup vinegar
1 teas salt (or more to taste)
optional: cream

Heat the milk just to boiling (if you have a thermometer it needs to be about 190 F, but its also okay to turn off the milk right before it starts to boil)

Add the vinegar and allow it to cool.

When cool drain off the watery part (whey) with a colander.

Pour the curds into a bowl and add salt, stir well. If you want it creamier then add some cream.
