Dillons: Did you buy a bunch of Grape-Nuts?
I did ! I bought 20 boxes this year during that big Post cereal sale at Dillons. Shortly thereafter I embarked on a use for this stuff and found this recipe. I've been using it every since. Its super yummy. I thought I would share it here for folks who also bought too many grape nuts
I use raw milk rather than buttermilk and soak them a bit longer:
1 c. Grape Nuts
2 c. buttermilk
2 c. sugar
2 eggs
3 1/2 c. flour
1/2 tsp. salt
1 tsp. soda
2 tsp. baking powder
Soak Grape Nuts in buttermilk for 10 minutes. Cream sugar and eggs. Add milk and Grape Nuts mixture. Sift dry ingredients and add to above mixture. Pour into 2 loaf pans, greased and floured. Bake at 350 degrees for about 45 minutes, or until toothpick comes out clean when stuck into center of loaf.

Re: Dillons: Did you buy a bunch of Grape-Nuts?
It was a bunch of post cereals. The Grape Nuts just happened to be the best deal because of the coupon that was out. It also included the shredded wheat and I forget what else. Anyone else remember this ?? Was I just dreaming ? Maybe it was at PC ? I remember that the reason I got the Grapenuts was because there was no shredded wheat left on the shelf. I think ! LOL. I guess I could look through my receipts and figure out when it was.....
