I tried this out this weekend and it got rave reviews. I prefer it after its cooled off but its a great summer time cake. BTW it so uses your stockpile stuff...

Key Lime Cake:
1 box of yellow cake mix
1 box of lime JELLO
3/4 cup orange juice
1 1/4 cup of vegtable oil.
4 eggs
Icing:
1 can of cream cheese icing
1 fresh lime - use 1 half of the lime for the juice and I used the other to garnish the cake.
Preheat oven to 350 degrees
Combine the cake mix, jello, eggs, orange juice, vegtable oil in large mixing bowl until batter is smooth. Pour into well greased bundt pan and bake for 35-40 minutes. Once done, remove and allow to cool to room temp.
In seperate bowl combine icing and juice and mix until smooth. Put into plastic bag, snip end and drizzle the icing back and forth over the cake. Serve and enjoy.
*You can ice the whole cake but I liked it just enough sweet to enough sour.

This DOES sound very tasty and very simple... and as usual, reading a great new recipe inspires me to dream up "variations" in an attempt to make a great thing even better! ;)
The margarita pic got me thinking (quite an accomplishment this early, LOL):
For an "adult" dessert, could some sort of liquor be added? Would that mess up the flavor, or enhance it? And if it would work, what are some ideas of what kind to use and where to add it into the recipe??
Another idea: could this be made into a "poke" cake-- the kind where you bake the cake in a 9x13 pan, poke holes in it while it's still warm, then pour something over it, to soak into it. Makes the cake really moist and is good at room temp, but even better after a night in the fridge! :) Maybe you could use the cream cheese icing and lime juice for this, or maybe reserve part of the lime jello??
What's everyone's thoughts on these ideas? Or if someone else has gotten "inspirations" from this yummy dish, I know I'd love to hear them!

I'm wondering if it would work the weight watchers way. That is our new thing my daughters and I are trying with our recipes. I could leave out the orange juice, eggs, and oil and substitute a can of diet orange drink. Might have to try that.
My husband and I where talking about this cake in bed last night! I think I am going to make one today!! Now I just have to make my lazy self go to the store!!

I have made a Key Lime Cheese Cake before
I made this cake yesterday! If you like lime, and you like Key Lime Pie you will love this cake! It taste just like key lime pie. It's very Limey!!! I can't say that the orange juice adds anything to it, in truth I think you could use lime juice instead of the orange juice and leave out the lime jello! It will take away that weird jello taste it leaves! The cake it very moist so SPRAY your pans very well because it does want to stick!! I think it’s because it is so very moist! After I added the lime juice to the frosting I added some powdered sugar to thicken it up instead of using it like a glaze! It's very good!!
