Pumpkin Roll

Cake:
3 eggs
2/3 C pumpkin
1 C sugar
1 tsp salt
1/3 C nuts (optional)
3/4 C all purpose flour
1 tsp baking soda
2 tsp cinnamon

Mix together and pour onto a cookie sheet with a raised edge ( I spray the pan). Bake 15 minutes at 375 degrees. Sprinkle a clean, towel a bit larger than the cookie sheet with powdered sugar while the cake is in the oven (be sure to use enough to prevent the cake from sticking). Remove the cake from the oven and flip warm cake onto the sugared towel. Roll the cake and the towel together. Place in the refrigerator to cool.

Filling:
8 oz cream cheese
2Tbsp butter
1 tsp vanilla
Mix until smooth. Unroll the cooled cake and spread the inside with the filling. Reroll the cake without the towel.

Keep refrigerated.
