What would you make with cream cheese and gingerbread men cookies?

I need some ideas. I have four boxes of the cookies that might go stale if I don't use them soon, and five packages of cream cheese that are getting past date. Thanks so much in advance!

Oh, and it would be great if it is something I can freeze because I am on a diet and if I eat all those cream cheese and cookies in one week I am in serious trouble!

You could put the cookies in the freezer. I always put extra crackers, cookies and chips in the freezer.

You could also crush the cookies and use them as the crust for a cheesecake.

Also, some people like to crumble cookies onto their ice cream. It is really good - I imagine gingerbread cookies with vanilla ice cream would be delicious.

Some people freeze their cream cheese too but I don't because I don't care for the texture afterward. A lot of people don't mind.

There is a thread that says looking for cream cheese recipes and in the Recipes, Pasta section there is a recipe I posted that uses cream cheese for spaghetti. Just look at it, it's really good.

Cheesecake freezes beautifully! Now I need some extra cream cheese and gingerbread so I can make a cheesecake too! ;)

Yes, I was thinking cheesecake too. So next question, is there a cheesecake recipe posted on HCW that is tried and true? I have always struggled with cheesecake recipes. Thanks!!
