You could put the cookies in the freezer. I always put extra crackers, cookies and chips in the freezer.
You could also crush the cookies and use them as the crust for a cheesecake.
Also, some people like to crumble cookies onto their ice cream. It is really good - I imagine gingerbread cookies with vanilla ice cream would be delicious.
Some people freeze their cream cheese too but I don't because I don't care for the texture afterward. A lot of people don't mind.
There is a thread that says looking for cream cheese recipes and in the Recipes, Pasta section there is a recipe I posted that uses cream cheese for spaghetti. Just look at it, it's really good.
