So I made a lemon poke cake the other night, and it dissapeared. I asked DH "so you liked the cake, huh?" and he said yes, but he wished it had pineapple in it. So I came up with this, and it turned out pretty good, and low fat too.

1 White cake mix (180 cal. and 3g. fat per serving)
1 can pineapple (any kind, in juice)
Brown Sugar
1 12oz can diet citrus soda (club soda, lemon-lime, orange, etc. I used a Diet Mtn. Dew!)

Add cake mix to a medium size mixing bowl, and add soda. Mix thoroughly, if it's a little lumpy, that's ok. Chop pineapple. To 24 cupcake liners, add 1 tbs. chopped pineapple, and 1tsp. brown sugar. Top with cake batter. Bake at 350 for about 25-28 minutes (these take a little longer to bake than the instructions call for) until lightly golden brown on top. Allow to cool slightly, serve warm for best results.
