    CHEF Maple Walnut Scones

    4 1/2 cups flour
    2 tablespoons + 2 teaspoons baking Powder
    1/4 cup + 2 tablespoons sugar
    1/2 teaspoon baking soda
    1 1/2 teaspoons salt
    1/2 pound butter
    1 1/2 cups walnuts
    3/4 cup 100% grade a maple syrup (no pancake syrup)
    3/4 cup buttermilk


    1. take flour, baking powder, baking soda, walnuts and salt mix together until mixed well.

    2. take COLD butter cut into pieces (try not to handle the butter too much you want it to stay cold) put into mixer and mix on med/high until butter is about pea size.

    3. mix syrup and buttermilk together add to dough just until moistened (you may not need all of wet ingredients, you don't want your dough too wet) take small portion out and form into a bar then take a knife and cut triangles. Place on lines baking sheet. repeat until all dough is formed. then chill in refrigerator for 1 hour.

    4. place triangles on separate baking sheet about 1 1/2" apart and bake at preheated 425 degree oven for 11-17 minutes until they start to brown just a little.

    Make a quick glaze from whipping powdered sugar, cream and melted butter together, brush over warm scones and enjoy!


    If the butter is right, these will be so soft and delicious.
