Default fruit pie/cobbler/something like that...

I wanted cobbler today but the only thing I had on hand was canned pineapple bits. So I figured well, I can just throw it out if it's nasty.

It is great!!! Here's what I did:

1 1/2 T Baking powder
3/4 C all-purpose flour
1 C sugar (I actually used 1/2 c sugar, 1/2 c Splenda)
~1 3/4 C pineapple bits, drained (I used the ones in the fruit juice, not syrup)
1 stick butter (need to use butter -- margarine just doesn't cut it here)
2 cups milk


So, you preheat the oven to 350. Put the stick of butter in a pyrex dish 8x8. Melt the butter in your dish. While it's melting, make your crust:

Mix baking powder, flour, and 1 C sugar (or in my case, 1/2 c sugar and 1/2 c Splenda) in mixing bowl. Add milk and mix until you have very few lumps.

Take your butter out of the oven, and pour the batter into the dish on top of the butter. DO NOT MIX!

Then carefully place your fruit on top of the batter. It will sink down and that's ok. NO MIXING!

Bake at 350 for about an hour or until golden brown and crusty. When you take it out, let it sit for about 15 minutes and the crust will absorb more of the butter.
