The Official "What to do with all those darned mandarin oranges" thread

Okay, so I'm sitting here with 5 cans of tropical fruit and 16 cans of mandarin oranges. And I just cook for me (and occasionally my picky 23 year old college student sister).

So I started looking up some recipes for what to do with this mandarin orange bounty.

Some suggestions:

1. Spinach salad with mandarin oranges, almonds, and bacon. Ooh! and blue cheese!

2. Sweet Cucumber and Mandarin Orange Salad

3. Martha Stewart's Chicken Salad Pitas

Other suggestions?

My mom used to make this salad for every party and folks loved it:

1 c Mandarin oranges
1 c drained pineapple
1 c flaked coconut
1 c maraschino cherries
1 c miniature marshmallows (buy the multi-colored ones for a pretty salad)
1 c sour cream

Drain all the juices, mix together and chill.

Now I'm thinking I need to make that for Thanksgiving!

I always pick up 5/$1 jello at Walgreens, and put the mandarin oranges in the bottle of the bowl. Pour the orange jello (or whatever flavor you want) over the top and chill.

Easy to do, and a great snack when you're craving something sweet!

Feed them to my three year old!!! She would go through those in a week!

That salad PP listed the recipe for is yummy!!! My mom makes it for Christmas every year but with walnuts in it as well.

Yep, my kids eat them like crazy - right out of the can. I may put some in jello just for a change of pace.

I bought 24 cans and have coupons to get another 14 - but I'll probably up that to 15 to get additional the catalina!!

I bought 24 cans, but they are good until December 2010, so I figure I just have to use 1 a month and they'll be gone before they expire. :-) I already used the first can the other day.

This is tangentially related, but I discovered that the catalina, since it is for .75, doubled up to a dollar! I was so excited! I guess I had never had a catalina for less than a dollar before so I didn't think about whether it would double or not. So instead of saving $1.50 with my 2, I saved $2! Woohoo!
