Please help with Kid's Birthday

Ok I am having my 3 yr old and 1 yr old (boy/girl) kids brithday party together cuz they are only three weeks apart and I don't see the sense in spending $$$ for two different parties. My delima is what to feed the crowd. I was thinking going mexican and doing Encilladas, taco salad, sweet corn bread, and mexican rice... i even thought about doing some "fried" ice cream with the cake, but I wanted to know if anyone else had some advice as what i should make for the large crowd... Also I figured I could keep some extra of the taco salad stuff on the side for those who don't like enchilladas to make their own taco's. Any advice would be apppriciated... I am trying to do this for a lower price and I know I can get pre-made enchilladas from walmart deli department and use those towards my halloween bud rebate. THANKS
