    Yams with Coconut and Pecans (crock pot)

    Nice for the holidays...

    2 pounds yams or sweet potatoes, peeled and sliced 1/2 inch thick
    1/4 tsp coconut extract
    1/4 tsp vanilla extract
    1/4 cup (1/2 stick) butter, melted
    1/2 cup firmly packed light or dark brown sugar
    1/4 cup shredded coconut
    1/4 cup broken pecan pieces
    1/4 tsp ground cinnamon
    2 tbsp. cold butter, cut into pieces

    Coat the crock pot with butter or non-stick cooking spray. Arrange the slices of yams in overlapping layer. Stir the extracts into the melted butter and drizzle over the yams. Combine the brown sugar, coconut, pecans, and cinnamon ina small bowl; sprinkle over the yams in a layer. Dot with the cold butter. Cover and cook on LOW until the yams are tender, 6 - 7 hours.

    Man this sounds yummy. I am going to make this real soon, holiday or not. I wonder if I have any pecans. My MIL picked some out last year but every time she makes something we all bite into hulls. YUCK!
