Default Crockpot Chicken

This is one of my families' fav and good for couponers because you probably have the ingredients stockpiled

Basic Recipe - makes 4 servings
1 package of boneless, skinless chicken thighs (I buy a package with 5 or 6 thighs not sure of weight)
1 can of black beans - drained
1 can of rotel tomatoes and diced chilies

Dump everything in a crockpot and cook on low 8 to 10 hours. Top with sour cream, cheese or gauc.

Depending what I have on hand - sometimes I add onions, green or red peppers, cumin. I have even done it with the new Hunts Fire Roasted tomatoes - all yum!

Do you serve this as a sandwich or tortilla filling, or over rice, or is it more like a stew?

When I saw the title of your thread, I immediately thought of the dish I call Crockpot Chicken: using whatever chicken pieces I have (usually leg quarters, but about the same amount of meat that you use), put as many as will fit in the crockpot and pour anywhere from 1/2 bottle to 1 whole bottle of italian dressing, plus enough water to just about cover the chicken; put the top on and cook for about 8 to 10 hours. This makes a great shredded chicken sandwich (similar to a BBQ sandwich), and it's also good over rice, with or without some beans or other veggies added! You can use regular italian or zesty italian in this, depending on your taste preference (or what you can find in your pantry- LOL!).

We just eat it as is - it is kinda stew like. DH doesn't like a lot of carbs at night but it would be great rolled up in tortillas!

I also thought of a different recipe when I saw the title. I make a rotisserie chicken in the crockpot. It uses a whole chicken. I have also made the italian chicken in the crockpot with boneless or whole chicken whichever I have on hand.

I have never bought just the wings or the legs quarters because I never knew what I would make with it. Thanks for the idea. This kind of meat usually goes on sale pretty cheap around here and I always think I might buy some and try to make hot wings.

So Aimeebee I have 2 whole chickens in the freezer and it would be so much easier to cook them in the crockpot. So how do you do your rotisserie chicken?

It's really easy. I'm not a recipe kinda person, though. I just toss in a reasonable amount.

Worcestershire sauce, soy sauce, garlic salt, season salt, a little cayenne pepper if you like it hot, all this goes over the skin. Half an onion, a chicken bouillon cube and a clove or two of garlic inside the bird. Cook on low all day, or sometimes I make it before bed and turn it off when the kids go off to school.

I make this with whatever I have on hand. If I don't have garlic, I will use some garlic powder. I sometimes use the chopped onions from my spices. If I have A-1 I add about a tablespoon over the chicken too. YUMMY. Whatever chicken isn't eaten for dinner, I usually make chicken salad the next day.

Yep, easy is the way I like it, too. I am a big fan of 5 or less ingredient meals. If I see a recipe more complicated than that, I know it isn't one I'll be trying. Especially if it has ingredients I don't normally buy.

Wish I had gotten in on a deal for those crockpot liners. I'm jealous.
