Southwest Chicken
1 can of corn (or frozen bag of corn - don't heat, throw in frozen)
1 can of black beans (not drained)
1 jar of salsa
Chicken Breasts ( I used two big size, but you could use more if you have a big crockpot)
Put the jar of black beans in the bottom. Put the corn on top. Then put 1/4 of the salsa jar on top of the corn. Lay the chicken breasts on top. Cover the chicken with the rest of the salsa. Cook for 6 hours on low. Once done, take chicken out and shred it. Then mix everything and serve over rice.

Yum! It's very similar to what we are having tomorrow. I add a packet of taco seasoning to mine and sometimes serve in taco shells.

its in the crock pot right now.
free chicken breasts
3 small 8 oz jars of pace salsa (1.50)
goya black beans (.10)
libby corn (.15)
taco seasoning(given to me free)
Total $1.65 to feed 5 people. not bad!!! i have an abundance of hard and soft taco shells and could also just serve with rice.

I just did this but used a bag of frozen breasts and then at the end added a block of cream cheese-sooo tasty, it fed the 4 of us dinner the first night, then lunch and tonight I turned it into a mexican lasagna.
