We don't eat a lot of chicken but I love this one & it's so easy.

1 lb chicken boneless skinless
1 jar salsa (your fav)
1 can whole kernal corn (drained)
1 can black beans

if your prefer
shredded cheese
sour cream
tortillas
rice

Mix first 4 ingredients in the crock pot, set on medium & cook for 5 hours, or until chicken is done.
Serve topped with cheese & sour cream, on top of rice, in tortillas, however you decide.

One of the things I love about this is how versatile it is, you can add whatever you like, take out what you don't like, & serve it however you like.
