Super easy and moist.
While I find "whole" chicken the easiest to cook in general, this crockpot recipe beat out my all time oven recipes x5 (it is soooo juicy, soft and flavorful!) and so I will be repeating it again and again. ;)

Ingredients:
Directions:
- 4 teaspoons salt
- 2 teaspoons paprika
- 1 teaspoon cayenne pepper 1
- 1 teaspoon onion powder
- 1 teaspoon thyme
- 1 teaspoon white pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1 large roasting chicken (with pop-up timer if possible)
- 1 cup chopped onion (optional, but a good idea as it provides moisture and extra flavor to the chicken)
Prep Time: 1/2 day
Total Time: 1 day
- In a small bowl, combine the spices.
- Remove any giblets from chicken and clean chicken.
- Rub spice mixture onto the chicken.
- Place in resealable plastic bag and refrigerate overnight. (I usually skip this step because I'm always in a hurry).
- When ready to cook, put chopped onion in bottom of crock pot.
- Add chicken. No liquid is needed, the chicken will make it's own juices.
- Cook on low 4-8 hours. (or on high 4-5 hours)
- Note: I highly recommend a pop-up timer in the chicken because some crock pots cook faster/slower than others (my crock pot cooks this recipe in 4-5 hours). no timer needed if you cook on high for 4-5 hours. ;)

I have never personally tried crockpot cooking with a "whole" frozen chicken, but I have read that others have successfully cooked crockpot chicken using frozen "parts."
If you are going to try cooking a "whole" frozen chicken, my suggestion would be to give it the FULL 8 hours on the low setting and then checking it for doneness after this.

I went to look this up because I was personally worried about the slow cooking of such a large frozen piece of chicken harboring the possibility for bacteria to grow...BUT I was pleasantly surprised to find that it is possible. The site I found says to cook a 4-5lb whole frozen chicken on low for 10hrs and to add 1 cup of warm liquid to the crockpot prior to putting the frozen chicken in the crockpot.(this is to prevent the sudden temperature change).
The site also says that if your crockpot/slow cooker says to only use thawed, then only use thawed. Here is the link to the site.
I have cooked frozen chicken parts in a crockpot, but I always start them on high for a few hours then turn it down to low. My reasoning is just precautionary...my mom raised me with a knowledge of the "danger zone" for food and such(she was/is a school cook).

I used to love to cook whole chickens - then I married my DH who does not like chicken. Oh how I miss it.
I do this ALL the time. It's so easy and uses less energy than the oven.
When it's all done, pick off as much meat as you can and leave the bones in the crock. Add an onion (if you didn't use it for stuffing), a carrot, chopped celery, etc. (veggies optional, but they do add to the flavor). Fill the crock up with water and turn on low for 12 hours or overnight. I usually just turn it on after dinner and let it run overnight. Turn off and let cool in the morning and strain out the bones/veggies with a mesh strainer. Then pour into freezer safe containers to freeze (or can if you know how to do that, I go through broth too fast to bother with canning it though). I like those plastic Ball canning jars. They are about the same size as a can of broth so if a recipe I'm using calls for a can I just pull one out of the freezer.
Putting the chicken in frozen would be easy but it seems it might be hard to get the seasonings to stick to it. Not sure.
