    There are so many!

    I made something SUPER quick and easy in my crockpot today. 2 pkgs of chicken thighs, 1 pkg of chicken drumsticks.

    I salted and peppered the chicken, added in 1/2 of a pour spout box of chick stock & a half a bottle of franks red hot. Turned it to high and walked away.

    6 hours later, made some quick rice & beans. easy peasy and so good. The chicken had some kick but not too bad.

    Today I threw chicken legs, can of mushroom soup and can of water in the crockpot, will make some rice and veggies at dinner time.

    Last night was a roast, onions, carrots, potatoes, mushrooms, 1 cup beef stock and about 3 T of worchestershire. I took the roast and lightly coated it with flour, salt, pepper, garlic powder and browned on all sides...but that was just extra last night, I don't normally do the browning.

    I'm a fan of chili - my secret is using salsa instead of just tomotoes. I also love to add grated cheese and sour cream for serving. Then stretch chili by making chili dogs.

    I have the book fix it and forget it - and every recipe I have tried has worked well. Just for Christmas I made cottage potatoes (they said to cook) but I just sliced, poured it all in and set it on high.

    Also there is a blog called crockpot 365 (she even got a book deal). I found it helpful because she tried each recipe and then gave reviews.

    Not to highjack the thread, but another gadget that helps you get dinner on the table fast - I highly recommend the George Foreman Grill (or a knockoff). it heats up FAST, and then for every recipe that says 4 mins per side - since it cooks from both sides you don;t have to flip and your done faster!

    Slow-cooked BBQ Pork Ribs



    Whenever I get country ribs on sale at the store, this is how I make them. I stick them in the crock-pot and forget about them. hope you all enjoy it.

    3 lbs of country ribs
    2 bottles of bbq sauce (your favorite flavor)
    1 bottle of beer (your favorite)
    1 tbsp crushed red pepper flakes
    2 onions, cut into chunks
    2 tbsp garlic
    1/4 cup chicken stock

    I brown the ribs first and throw them into the crockpot. Add the rest of the ingredients and let cook for 6 - 8 hours.

    It is excellent!

    Chili-Orange Chicken



    I found this recipe in a Woman's day magazine and tried it. It turned out fantastic. With the left overs we are actually going to be shredding the chicken and making enchiladas from them. The only difference we did, in order to make the recipe our own, was to add minced chipotles to the dish.

    3/4 cup mild enchilada sauce
    1/4 cup barbecue sauce (I used a bbq sauce that had honey in it, any brand)
    2 tbsp salt free chili powder
    2 tsp ground cumin
    4 bone-in chicken breasts
    1 chipotle pepper, minced
    3 tbsp orange marmalade
    2 tsp grated orange zest

    Mix enchilada sauce and barbecue sauce in a 6-quart or larger slow cooker. mix chili powder and cumin in a small cup. Rub all over chicken. Put chicken in slow cooker along with the minced chipotle pepper and turn the chicken to coat with the sauce. cover and cook on high 3 to 4 hours or on low 5 to 7 hours until chicken is cooked through. Turn off cooker. Remove chicken to a serving platter. Stir marmalade into sauce until blended. Stir in the grated orange zest. Pour over the chicken.




    Chicken with Tropical Barbecue Sauce



    A friend of mine made this tonight in the slowcooker and it was absolutely fantastic. I revised the recipe just a bit by adding the pepper, garlic and onion, but even without those it was excellent. He had only one complaint, the chicken was a bit on the dry side. This can be altered by using chicken thighs, but the chicken breasts of course are a lot healthier.

    6 boneless, skinless chicken breast halves
    1/4 cup molasses
    2 tbsp orange juice
    2 tbsp cider vinegar
    3 tbsp worcestershire sauce
    2 tsp prepared mustard
    5 whole cloves of garlic
    1 red bell pepper, julienned
    1 yellow pepper, julienned
    1 small onion, julienned

    Place chicken breasts in slow cooker. Add the garlic, peppers and onions. Combine molasses, orange juice, cider vinegard, worcestershire sauce, and prepared mustard in a small bowl. Brush over chicken. Cover and cook on high for 3 to 4 hours or until chick is tender. Instead of brushing over the chicken, pour a 1/4 of the sauce over the chicken and let cook, when the chicken has about 15 minutes left, pour the remaining sauce into the crock pot. This was a fantastic dish. You can either serve this over rice or pasta. We actually cut up a whole pineapple and had it with rice.


    Slow Cooker Chicken



    A funny story about this, my parents and I loved this so much, when we first started making it, we made it so much we got sick of it! I personally don't like the chicken thighs, so I would use chicken breasts, and in order to make this on the healthy side, the golden cream of mushroom soup can be the low sodium one and low fat. It really won't change the taste of the dish, but will decrease the amount of fat and sodium in the dish.

    1 package 6 pieces chicken thighs
    Salt and pepper
    1 package baby carrots
    ¼ tsp basil
    2 cans golden cream of mushroom soup
    2 tsp garlic
    1 small onion sliced
    2 bay leaves
    6 top onions sliced into ½ pieces
    1 cup White Wine
    1 package sliced mushrooms

    Trim some of the skin and fat off the chicken. Combine all ingredients into the slow cooker. Turn setting on low and cook 6 – 8 hours. Thicken gravy with Bisto or cornstarch and water. Serve over cooked noodles or combine noodles in pot to also thicken the gravy. Also serve with Garlic bread and salad.

    I can't believe nobody has posted the crockpot lady's blog yet!

    A Year of Slow Cooking

    Everything I have tried form her site has been great! She makes everything from apple dumplings to yogurt. And she does post her flops too and tells you how bad they are, but most recipes are successes. I never knew you could do so much with a crock pot before I read her blog. I always just used mine for roasts or soup.
