I count them before I hand them over and count how many were scanned.
I had a cashier once tell me that a product was already on sale, so why did I think I needed to use those types of coupons..I just told her to remove those items from sale and stomped off. I'm not so intimiated now, but I just have a feeling that some of my coupons never make it off my total......they scan them so fast I can't keep up.. Any tips?
I too count the number I hand over. If its alot, like 20 or more, I'll hand them over in groups of 10. I'll jot the # down on my grocery list, then count the coupons on my receipt.

Whoa, that was a little rude that she said that to you! That is something I would def. be letting a manager about. When using manufacturer coupons it doesn't matter if an item is on sale or not, the store is going to get their money back.
Do not let this cashier intimidate you.
As for keeping track, I also recommend counting your coupons before you even get in line at the register. I take a printed grocery list that I make in Google Docs and on it I make note of what coupons I am using for what products. For example, if I am buying Quaker Instant Oatmeal in the coupons column I'd say "(2) $1/1 mfr q & (2) $1/1 TQ" Then I know I need to have 4 coupons accounted for just for the Quaker. After I'm done checking out and before I even leave the store, I check my receipt and count to be sure all my coupons came off. If any are missing, I go straight to customer service. By having my list of what coupons I'm using, and knowing the total, I can easily pin point which coupons are missing.
It sounds like a lot of work, but it's really not. If they miss any coupons, even just one, that's money coming out of your pocket that you shouldn't have to pay kwim?

I group all my things together. Like if I have a Q for $.50/2 cans of Chunky Soup.. then I put the Q w/those 2 cans of soup on the belt. That way I know everything is accounted for- food wise/amounts and Qs.

I keep track of my running total as I shop, so I know about what I should pay before tax when all of my coupons are applied. I also watch the register like a hawk. If I have a large number of coupons or am concerned for some reason that they will not all be taken off (especially if I have multiples of the same coupon), I tell the cashier ahead of time "I have a lot of coupons, and I'm going to hand them to you one at a time if that's okay." Whether it's okay with them or not, that's how I'm going to do it, but I've never had them say "no" or give me a hard time.
I would not have said remove the items - I would have said "get the manager" is what I would have said.....
As far as tips, I hand my coupons in small groups - so if I hand 5 coupons, I wait to see all 5 scanned, then hand another small stack. I only do this if I have alot of coupons. It helps me ensure they all scan.

I have a store of small envelopes in my notebook, with a pen. As I shop, I put the coupons in the envelope and on the front, I note in the first column, how many coupons I put in, then in the next column how much I'm paying for that item x how many items. When I get to the limit number of coupons in the first column (say 20), I add the total expense in the second column and write it down and circle it. The total at check out should be very close to that, plus tax. While they scan the coupons, I keep count of how many by counting on my fingers on the little check writing counter there. If I hear one that doesn't double beep, or beeps weird, I'll ask them if that coupon took or if it doubled, all along while watching the computer screen. Then I can pick up counting starting with the finger I have down on the counter! If I think something went wrong that didn't get resolved, I'll ask them to put those coupons aside, because I'm going to check the receipt and may have to go to the customer service counter and they may have to come back and check them. That's all! No problems!! You'll find your rhythm though!!
