Default Coconut Macaroons

Coconut Macaroons
36 cookies
-- one of my hubby's favorites!!


Ingredients:
2 egg whites
1/8 t salt
½ c sugar
½ t vanilla extract
3 C flaked coconut
¼ C all purpose flour


Preheat oven to 300 degrees.


In a small bowl with a hand-held mixer, beat egg whites and salt at a high speed until soft peaks form. Sprinkle sugar in 2 T at a time, beating well after each addition until sugar is completely dissolved and stiff glossy peaks form.


Beat in vanilla.


With a rubber spatula, fold in coconut and flour.


Drop by teaspoonfuls about an inch apart onto a nonstick baking sheet.


Bake at 300 degrees for about 10 minutes or until lightly golden and set. Watch closely these are easily overdone!!


Remove cookies and cool completely on a wire rack.

I love these things but no mater what I do or what receipe I use they never come out right. They are always too stiff / hard.

I've had that problem too. I started experimenting with just a couple cookies at a time with different baking times until I found the best one for my oven. Plus they tend to harden when they cool too, so, sometimes they seem fine when they come out, but then get too hard as they cool.

I never did find out who the lady was but a once a month dinner I use to go to someone would bring them and they were always so moist & never hard. I wish I would have found out who made them & what their sevret was.

I gave up making them for 2 reasons (1) too hard (2) DH does not like coconut
