Vanilla Butterscotch Cappuccino Cookies

makes about 2 dozen cookies
Ingredients:
1/2 C butter, softened
1 C brown sugar
3 T white sugar
1 egg
2 t vanilla extract
1/2 t baking soda
1/2 t baking powder
1/2 t salt
1 3/4 C flour
1 t instant vanilla cappuccino powder
8 oz butterscotch chips
Preheat oven to 375 degrees.
Cream butter and sugars until fluffly. Beat in egg and vanilla. Stir in cappuccino.
Combine remaining dry ingredients in a separate bowl. Stir together with a whisk until evenly combined.
Cream dry ingredients into the butter mixture. Stir in butterscotch chips.
Chill batter at least 15 minutes before baking.
Drop by heaping tablespoons onto an ungreased nonstick cookie sheet.
Bake at 375 degrees for 8-10 minutes for a soft cookie, or 10-12 minutes for a crispier cookie.
Cool slightly on a wire rack before serving.
