I make this all the time...SO easy and really good!
1 2/3 cups granulated sugar
2/3 cup NESTLÉ® CARNATION® Regular Evaporated Milk
2 tbsp butter
1/2 tsp salt
2 cups miniature marshmallows
1 1/2 cups semisweet chocolate chips
1 tsp vanilla
1/2 cup chopped walnuts (optional)
Line 8-inch (2 L) square baking pan with waxed paper; set aside.
Combine sugar, evaporated milk, butter and salt in medium saucepan; bring to rolling boil over medium heat, stirring constantly. Boil 4 to 5 minutes or until mixture starts to thicken. Remove from heat. Stir in marshmallows, chocolate chips, vanilla and nuts (if desired) until marshmallows and chocolate melt and blend.
Pour into prepared pan. Chill until set. Cut into 1-inch (2.5 cm) squares. Store in refrigerator in sealed container.
Makes 49 squares.
~~My Notes~~
To make nice Christmas gifts for teachers, neighbors, etc pour into holiday colored ziploc containers (small squares will hold 1/2 batch of fudge, small squares will hold 1 whole batch). When cool, place lid and slap a bow on it. We make 100's of containers of fudge each year for gift giving.
To make different flavors of fudge - use peanut butter chips, butter scotch chips, white chocolate chips, etc. Use different nuts and even dried friut. You can also add candy flavorings in place of the vanilla extract use 1/2 tsp candy flavorings.
Some of our favorites are:
- Peanut butter w/chopped roasted peanuts
- White chocolate with dried cranberries and almonds flavored with almond extract.
- Dark chocolate with raspberry candy flavoring
- Dark chocolate with orange candy flavoring
- Chocolate and white chocolate swirled with peppermint candy flavoring.
