Cake Mix Biscotti:
1 box cake mix
8 Tb butter, melted
2 eggs
1 cup flour
(add optional mix-ins like 1/2 cup nuts, ½ cup chocolate chips or cinnamon chips, ¼ cup dried fruit, ¼ tsp almond extract, ¼ tsp orange extract or spices)
Use mixer to combine cake mix, butter, eggs and flour. Mix for 3-4 minutes. Then add optional ingredients. Transfer dough to baking sheet lined with parchment paper. With floured hands shape the dough into a rectangle about 14 inches long by 4 inches wide by ½ inch thick. Mound the dough so it is slightly higher in the center. Place the baking sheet into an oven heated to 350. Bake for 30-35 minutes. Let cool for 10 minutes.
Use a sharp serrated knife to slice the rectangle on the diagonal into 1-inch thick slices. Carefully turn the slices onto their sides. Return the baking sheet to the oven. Bake for 10 minutes. Turn the oven off and let the biscotti remain in the oven until they are crisp, 30 to 40 minutes more. Remove the baking sheet from the oven, transfer the biscotti to a rack and allow them to cool for 2 hours.

No, not yet. There are several variations on this in the Cake Mix Doctor and the Chocolate Cake Mix doctor. I have to return these books to the library, so I'm typing up the interesting recipes. I promise to try this before the end of the week.
