    Default Pineapple Casserole

    Pineapple Casserole

    2 large cans pineapple tidbits, drained (reserve 1/4 C pineapple juice)
    1 C sugar
    5 Tbsp flour
    2 1/2 C shredded, mild Cheddar cheese
    2 C Ritz crackers
    1 stick of butter

    Put the pineapples in the bottom of a 9x13 inch casserole dish. Mix the sugar, flour, and pineapple juice together in a small bowl (it will be a syrupy consistency). Pour over the pineapples. Sprinkle the top with cheese. Mix the melted butter with the Ritz crackers and sprinkle those over the casserole. Cover with foil and bake for 25 minutes at 325 degrees. Remove the foil and put back in the oven for an additional 5 minutes or until cheese is melted.

    make this every time we have ham. My recipe is just a little different, I mix the flour, sugar and cheese together and sprinkle over the pineapple (also only use 1c cheese) crumble the Ritz and then pour the melted butter over top. It's a family favorite.
