broccoli casserole input needed
I want to make this recipe for dinner tonight. It will serve two purposes for me. First of all, I am in the mood for good-old-home-cooking-comfort-food! Second, I have everything it takes in my stockpile!
But, it says to cook the frozen broccoli and drain it...then add it to the other stuff and bake it for 30 mins. Won't it be totally overcooked??? I'm thinking that I should just thaw it and drain the moisture. I don't like mushy broccoli! LMK what you think. Thanks!!!!
BROCCOLI CASSEROLE
CASSEROLE:
1 pkg. chopped broccoli, cooked and drained
1/2 can cream of mushroom soup
1 egg, beaten
1/2 c. mayonnaise
2 tbsp. minced onion
1/2 c. grated mild cheese
Salt and pepper to taste
TOPPING:
1 1/2 to 2 c. Ritz crackers, crumbled
2 tbsp. butter
Mix broccoli, soup, and other casserole ingredients together. Pour into buttered dish. Mix crackers and butter together. Sprinkle on top. Bake at 350 degrees for 30 minutes.

hmmmm - mine is with frozen brocc, minute rice, mush soup, a stick of butter melted and poured over - maybe a little milk and then cooked - very easy and no thawing - I apologize I'm not at home for the full recipe but maybe google.....I wouldn't thaw it, although this last time I was upset with all the stems (no flowerettes in the frozen mix) that I considered making it next time with fresh brocc and wondered what that would do......good luck and I can't wait to have this Saturday at our family dinner:)

Other recipes that I have seen and used with frozen broccoli have called for putting it in frozen and then baking it off. I would bet this would work here too.

Thanks everyone! I was pretty sure that I wasn't going to cook it before I added it, but I always like a little input before I change a recipe!
Teens&tots...I like the one with rice too. But we're having meatloaf and baked potatoes, so I didn't think we needed rice too, this time.
