Sounds delicious. I love zucchini bread so I know this would be a winner for me. Now to find some zucchini and blueberries.
Blueberry Zucchini Muffins (makes 18)
3 eggs, lightly beaten
1/2 cup applesauce (unsweetened)
1/2 cup veg oil
3 teas vanilla extract
1 3/4 cups plus 2 Tablespoons turbinado sugar
2 cups shredded zucchini (about 2), squeeze to remove some juice
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
1 teas salt
2 teas baking powder
1/4 teas baking soda
1 Tablespoon ground cinnamon
1 pint fresh blueberries
ground flaxseed (optional)
1. Preheat oven to 350F. Lightly grease muffin tins.
2. In a large bowl, beat together the eggs, oil, applesauce, vanilla, and 1 3/4 cups sugar. Fold in the zucchini. In a separate bowl, combine the flour, salt, baking powder, baking soda and cinnamon. Mix dry ingredients into the wet until just incorporated. Gently fold in the blueberries. Fill muffin tins 3/4 full. Sprinkle top with the additional sugar as desired.
3. Bake 25-30 minutes in the preheated oven, or until a toothpick inserted in the center of the muffin comes out clean. Cool 10 minutes in the pans, then turn out onto wire racks to cool completely.
